Don's English Muffins
by Lois Carter Fay
Combine until dissolved:
2 cups hot water (not too hot or it will kill the yeast)
1 cup scalded milk (cooled)
4 tablespoons honey
1 teaspoon salt
2 packages of yeast
Mix all this up and let it stand for a few minutes until the yeast starts to bubble.
Then add, a little at a time:
4 cups sifted flour
Let this gooey mixture raise until double in bulk.
Mix in :
1 stick of melted butter
4 cups of flour (one at a time, a little more a little less until you have a fairly stiff ball that can be rolled out. Knead the last cup or so in by hand.)
Grease cookie sheets and sprinkle with cornmeal. Roll dough out to about 3/8 to 1/2 inch thick. Cut into circles. Place on cookie sheets to rise.
Let raise to double.
Bake at 350 degrees for 15–20 minutes or until golden brown. Cool on racks. Eat warm or freeze.
